Roasted Sweet Potato Salad Recipe
Bright, flavorful, and hearty, this Roasted Sweet Potato Salad combines sweet potatoes, crisp greens, and juicy tangerines with a tangy Dijon vinaigrette. It's an easy, stunning dish perfect for any occasion. Grab potatoes from the Indian Springs Farmer Collective, greens from River Queen Greens, and citrus and persimmons from L’Hoste Citrus!
Ingredients
- 2-3 large sweet potatoes, cubed & peeled
- 3 heads radicchio or lettuce of choice
- 2-3 tangerines, peeled & divided into segments
- 2-3 fuyu persimmons, stem removed & sliced thinly like an apple
- ¾ cup olive oil
- Salt & pepper to taste
- 2 tbsp dijon mustard
- 1 tbsp honey or maple syrup
- ¼ cup apple cider vinegar
- 1 garlic clove
Directions
- Heat oven to 400 degrees F. Prep pans with parchment paper & place chopped sweet potatoes. Drizzle with olive oil & season with salt & pepper to taste. Hand toss everything.
- Roast the squash, flipping once halfway through 30 minutes. Remove pan & let cool down a bit.
- In a large bowl whisk mustard, honey, maple syrup, vinegar & garlic. While whisking slowly drizzle olive oil in the mixture to make a dressing.
- Add sweet potato & lettuce of choice to the bowl & combine everything gently.
- Add tangerines & persimmons to top of salad.
- Serve immediately or within a few hours. Enjoy
